Here’s yesterday’s eats…..better late than never right?
Breakkie- natural soya yogurt with berries.
Lunch – Clearspring soy sauce brown rice noodles, a nectarine and some unpictured sugar snap peas.
My pre-workout snack was a juicy Pink Lady apple

After a five miler on the treadmill, followed by a fab zumba class, I headed home and thought I’d have an experiment……
Introducing Savoury Socca Cake!

This turned out as an unexpected success! It was soft and doughy but light and spongy at the same time. With a hint of coconut and a slightly grain-like taste, I’ll be sure to further my socca cake experiments in the not too distant future!
Savoury Socca Cake- ingredients (serves 1)
- 2heaped Tbsp chickpea flour
- 1 heaped Tbsp brown rice flour
- 1/2 tsp bicarbonate of soda
- 1/2tsp baking powder
- pinch salt and pepper
- 1/3cup + 2tbsp water
Before you make the batter, place a mini roasting dish in the oven, containing 1tsp coconut oil. Heat oven to 120degC. Mix up a smooth batter and pour into the coconutty dish. Bake for 12-15 mins until golden and springy to touch. Serve with veggies, sauces, meat replacements, beans, salad…..whatever takes your fancy!!

For some reason I was staring at the picture of the nectarine and reading about your pink lady and thinking.. “What the heck is she talking about?! Am I going crazy?”. Anyway- pink lady is the best kind!
Nectarines are SO good! I think I may like them even more than peaches! I wish my grocery store had soy yogurt. They used to carry it. Now they don’t. I’m sad.
I guess I’ll have to make some out of tofu!

call me crazy but im so hungry for that apple right now.. i think its cuz im kind of thirsty and the crunchy sweet watery-ness of that apple is calling my name
