Hi Ladies……I’ve spent most of today in bed with some sort of bug. Emma really isn’t a happy bunny right now. Anyway……..less of the bunnies and more of the little turtles
I made these lil guys to cheer myself up a bit. I just love turtles. In a previous post, I made chocolate-pecan turtles but this time I wanted a more fudgey flavour so I made some lacuma fudge and added almonds and rainbow raisins to transform them into turtles
The body of the turtles were made using the following ingredients
-30g Cocoa butter
-1/3rd cup maple syrup
-enough lacuma to turn the mixture into a rollable paste
Melt the cocoa butter over a pan of gently simmering water and then stir in the maple syrup and then the lacuma, until a dough-like paste is formed. Add enough lacuma so that the mixture formed can be rolled into balls easily.
Divide and roll the lacuma into 5-7small balls and then squash down into a flat, turtle body. Push almonds into the fudge as to form a turtle as above. Of course, you may wish to use an alternative kind of nut. Press dried fruit into the top of the fudge to create a “shell”. I used rainbow raisins as their colour is in keeping with the turtle theme.
Place the little guys into the fridge to chill and serve once the fudge has gone a little harder. Enjoy!
These turtles will brighten your day if you like all things fudge and caramel. Lacuma is my favourite of the “weird” foods
It has a unique, delicious taste that deserves to be sampled!
And while we’re here lets take a moment to appreciate this beautiful creature. Maybe my turtles are a turtles version of our gingerbread men!

Unfortunately I don’t have a fave animal, I’ve always been kind of scared of most animals!
Whoa!!! New blog title!!! Those are so adorable, they remind me of animal crackers but even prettier. That would be a really great way to get kids to eat healthy! My favorite animal is a dolphin.
Now I really want to bake fudge. I’ve never used cocoa butter before, but this looks really good!

My favorite animal is an okapi, it’s a relative of a giraffe but it looks like a horse zebra
omigod! this are beyond adorable. This just made me smile incredibly, and completely brightened up my not-so-great day. I have this picture in my mind of a bunny cupcake I had a while ago…it was so cute! I’d definitely want to recreate that one some day. Maybe when i’m not so lazy in the kitchen!

Those are amazing! It’s so hard to just choose one favorite animal. When I was a kid though I loved giraffes, I thought it was so neat that they had blue tongues. I think Kangaroo’s are pretty darn awesome!
