Man I’m one tired bunny! Surely I should feel rested by this time on a Sunday evening?! Alas, I’ve just opened my eyes after my second nap of the day!

As it’s my mum’s birthday on Wednesday, we met up for tea and cake and then had a look around the shops. We had a good catch up and I let my mum pick out a new handbag for her pressie. I love to be able to treat my parents now that I’m working, as they’ve sacrificed so much for me over the years.
I managed to squeeze in a 4mile run and a little bit of kitchen time between seeing mum, sleeping and meeting Phil. This granola recipe was inspired by Jemma, who rightly pointed out that making your own granola is waaay more cost effective than buying it….and, of course, you can make any flavour you want!
Orange infused cranberry-macadamia granola
2 cups oats
Dried cranberries
Crushed macadamia nuts
2tbsp groundnut oil
2tbsp maple syrup
Coconut shreds
1tsp orange zest
2tbsp fresh orange juice

Stir the oil, orange juice, zest and maple syrup, into the oats, ensuring that the oats are coated nicely.
Place the oats on a lightly greased tray and place in the oven for 15-20 mins, 150degC.
The oats will leave the oven slightly crispy and the smell will drift through your house like a dream. Add thd cranberries, nuts, coconut and raisins and seeds if you so wish. To make the recipe autumnal, you might want to add cinnamon before the oats go into the oven.
Enjoy with cold almond milk….mmmmm!!!
